What’s so “asian” about this? Well to start with, the toast is served with kaya, a type of coconut jam which looks kind of like algae but luckily tastes nothing like it, and a slice (yes really, a slice) of very cold butter. The sweetness of the kaya, the saltiness of the butter and the crunch from the bread… heaven. The half boiled eggs are eaten with dark soy sauce and white pepper, and if you’re feeling extra rebellious, use the kaya toast as your edible spoon. If you are ever in Singapore, you absolutely must try this at Tong Ah, a coffeeshop at Keong Saik Road. The tea with milk alone is worth the trip!
